Honey Jumbles are a childhood classic – make your own at home

This Honey Jumbles recipe is by Debbie Reid and she is making them for the fundraiser night this weekend. Ingredients

75g butter

½ cup honey

1 1/2  cups plain flour

1 teaspoon ground ginger

1 teaspoon mixed spice

1/2 teaspoon bicarb soda

11/2 tablespoons milk

Icing

1 egg white

11/2 cups icing sugar

Pink food colouring

Instructions

Combine the butter and honey in a large saucepan and stir(or use a whisk) over medium-low heat till melted and smooth. Set aside to cool slightly.

Add the rest of the ingredients to the saucepan and mix well with a wooden spoon. Cover the saucepan with plastic wrap and refrigerate for 30 minutes until firm.

Preheat the oven to 180C and line 2 baking trays with baking paper.

Divide the dough into two equal portions then divide one portion into 10 even-sized pieces. Roll each small portion into a 7cm log and place on the prepared tray patting slightly to flatten. Repeat with the remaining mixture.

Bake for 12 minutes or until the edges are slightly browned and the top is slightly cracked.

Cool on trays for 2 mins then place on a cooling rack.

Make the icing by adding the ingredients together then separate half of the mixture to a second small bowl and add a drop of pink colouring. Ice the cookies once completely cooled.
