It doesn’t need to be a Rocky Road to Easter with this extra sweet treat

Debbie Reid has an Easter treat for you with this Easter Rocky Road recipe.

Ingredients

500g milk chocolate

1 tablespoon of vegetable oil

6 marshmallow eggs (chopped into quarters)

4 Cadbury Creme eggs (chopped into quarters)

6 small milk chocolate eggs

200g mini speckled eggs (1/2 cup reserved for the top)

120g raspberry lollies

Instructions

Line the base of an approx 28cm by 18cm lamington pan with baking paper.

Chop the required eggs into quarters and have the rest of the ingredients ready.

Break the 500g of chocolate into pieces and place in a medium microwave-safe bowl. Microwave at 40-second intervals and mix till chocolate has completely melted then add the oil and stir in.

Stir through all the eggs, egg quarters and raspberry lollies till combined then working quickly spread the mixture into the prepared pan adding the reserved speckled eggs to the top.

Place in the fridge for 2 hours or till set completely. 

Use a sharp knife to cut into slices.

NOTE: you can substitute the 500g  milk chocolate for dark or white chocolate along with swapping other eggs or lollies but just ensure the quantities are similar.
