Make Passionfruit Custard Slice for Dad (and everyone else)

Try this yummy Passionfruit Custard Slice.

Ingredients

4 sheets of frozen puff pastry

1 tablespoon of melted butter

1 tablespoon raw sugar

600ml thickened cream

1 packet of Vanilla Instant Pudding (Cottees 100g)

2 cups icing sugar mixture

2 passion fruits halved or 2 tablespoons passionfruit pulp

Instructions

Preheat the oven to 200c and space out the oven racks.

Grease a 3cm-deep, 16.5cm x 26cm (base) slab pan. Line base and sides with baking paper allowing a small overhang.

Allow the sheets of puff pastry to just defrost then paint one side of one of the sheets with the melted butter then place another sheet on top. Mix the raw sugar with 1 tablespoon of hot water and paint this on top. Do this with the other remaining 2 sheets.

Sandwich the sheets in between baking paper lined trays (4 trays needed) stopping the puff from rising too high then cook for approx 20mins or until the 2 sheets are cooked and golden brown. Once done place on racks to completely cool down.

Combine the thickened cream and the Vanilla Instant Pudding with a hand beater till thickened for about two minutes.

Once cooled cut the pastry sheets if needed to fit in the tray and place one on the bottom. Pour cream mixture evenly over it then place the remaining sheet on top. Refrigerate for several hours or until set.

Sift icing sugar into a bowl. Add 2 tablespoons passionfruit pulp. Stir to make a thick icing, adding a splash of water if required. Spoon icing over slice. Refrigerate for 1 hour or until icing sets. Cut slice into squares using a bread knife. Serve.
