Debbie Reid from Kyogle adds some extra ingredients to the traditional Anzac biscuit recipe.
Ingredients
1 cup raw sugar
1 cup plain flour
1 cup toasted fruit and nut muesli
¾ cup coconut
1 tablespoons good maple syrup
4oz of butter
1 teaspoon bicarbonate soda
2 tablespoons of hot water
Instructions
Line two baking trays with baking paper and preheat oven to 190C.
Add all the dry ingredients into a large bowl (except the soda) and mix.
In a small saucepan, melt the butter and syrup together till melted and mixed in then take off heat.
In a separate small bowl mix the soda and water together then add to the butter and syrup mixture causing it to foam.
Add to the dry ingredients and mix through.
Roll into small balls and place on the trays.
Bake for about 15 minutes (swapping trays halfway) or until golden in colour.
