
Debbie Reid shares this most delicious recipe for cinnamon biscuits. If only she’d come to my house and make them.
Ingredients
1 cup caster sugar
115gms of butter (softened)
1 large egg
1 teaspoon of vanilla
1 1/2 cups flour
2 teaspoons of cinnamon
1 teaspoon baking powder
¼ teaspoon salt
cinnamon sugar (about ½ cup caster sugar to 2 teaspoons of cinnamon…use more if needed)
Instructions
In a large bowl cream together the softened butter and sugar. Beat in the egg and vanilla
Combine flour, cinnamon, baking powder and salt then add it to the butter mixture and blend well.
Cover and refrigerate for about 20 minutes or until the mixture is firm enough to roll into balls.
Shape dough into small balls (3/4 inch in diameter) then roll in cinnamon sugar to coat.
Set cookies 1 inch apart on two trays covered with baking paper.
Bake at 200C for about 15 minutes (swapping trays halfway) or until edges are lightly browned.
Cool slightly on pans then remove to racks to cool completely.
