
Ingredients
½ cup sunflower kernels
1 tablespoon of sesame seeds
3 medium zucchini (cut into 0.5cm slices)
1 medium red onion (sliced)
1 dessertspoon of minced garlic (I use from a jar with this one)
1 tablespoon of vegetable oil
2 tablespoons soy sauce
1 teaspoon of oyster sauce
1 teaspoon toasted sesame oil
3 shallots for garnish
Rice to serve
Instructions
Roast the sunflower kernels and the sesame seeds under the grill till golden.
Add the vegetable oil to a large frying pan then when hot add the onion. Saute till soft and translucent then add minced garlic.
Add sliced zucchini. Stir fry on high heat for 3-4 mins using tongs to turn when needed.
Add soy sauce, oyster sauce, salt and pepper. Toss together and fry a few more minutes till zucchini is coated well and starts to blister.
Mix through the toasted sunflower kernels, sesame seeds and sesame oil.
Serve with rice and the chopped shallots for garnish.
