Jammy Valentine Cookies
Ingredients
170 grams of softened butter
½ cup caster sugar
1 large egg
1 teaspoon vanilla essence
1 cup of icing sugar(plus extra for dusting)
2 cups of plain flour (plus extra if required)
1 teaspoon of baking powder
1 cup of your preferred jam (I used blueberry and strawberry)
~Large and small heart cookie cutters are required~
Instructions
Line two baking trays with baking paper and preheat oven to 180C.
In a large bowl, beat the softened butter with a hand mixer till light and fluffy and then add the caster sugar, egg, and vanilla and continue mixing.
Add the icing sugar and the baking powder and mix till combined.
Slowly add in the flour continuing with the hand beaters till the mixture forms into a dough ball. If this doesn’t happen add a little more flour till a dough ball is formed.
On a lightly floured surface roll out half of the dough till about 1/8 inch thickness then use the large heart cutter to cut out the cookies. Transfer to a tray(s) and cook for 10 minutes or until the edges start to brown. Then remove and place on a wire rack to cool.
Roll the other half of the dough and cut out a large heart as before and place on a prepared tray then use the small cutter to cut out a small heart in the centre. Discard the centre making a frame. After doing this with the rest of the mixture cook the frames as done previously. Once cooked let cool completely on a rack.
Once cooled, dust the framed cookies with icing sugar then with your choice of jam spread it on the whole heart then gently place the dusted frame on top.
If not eating all at once the cookies(before being jammed)can be frozen to be used at a later date.
