
Debbie Reid gives us a quick and affordable chicken recipe you could make today if you have a French onion soup mix in your pantry.
Ingredients
6 chicken thigh fillets
1 French onion soup mix
3 tablespoons olive oil
2 onions chopped (I used one red and one brown)
1 1/2 cups long grain rice
2 cups chicken stock
¼ cup white wine
3 tablespoons sour cream
1 large handful of spinach leaves (I use baby leaves)
Instructions
1. In a large frying pan sauté onions with some butter/oil and salt. Once onions are soft and cooked through remove from pan and set aside.
2. Coat the chicken with French onion soup mix.
3. In the same frypan add three tablespoons of oil and sear the chicken on both sides till golden then remove from pan.
4. Again, in the same pan add the rice and cook for one minute stirring. Then add the wine, stock, sour cream and some salt and bring to a simmer (about 3–4 minutes).
5. Add the onions, the spinach leaves and the chicken back into the pan and then cover and continue to simmer for 20-25 minutes (add extra water if needed).
