RECIPE: Quick Thai style mince noodles

Debbie Reid has another beaut recipe for us. This one makes for a quick dinner.

Quick Thai Style Mince Noodles

Ingredients

2 packets of two-minutes noodles (just the noodles)

1 tablespoon of olive oil

1 small red onion diced

1 teaspoon of minced garlic

250g beef mince

¼ of a cabbage finely sliced

50g toasted pine nuts

2 small bunches of coriander (roots and stems)

Dash of fish sauce

Dash of soy sauce

Instructions

Break up and cook the two-minute noodles in boiling water in a small saucepan till soft.

Heat oil in a shallow non-stick frying pan over medium heat.

Add and combine the onion, the garlic and the mince till the mince is cooked.

Add the cabbage, the coriander and the pine nuts and combine.

Add the fish sauce and the soy sauce and mix through.

Drain the noodles and mix through the mince with tongs.

Add coriander garnish and serve….. (chilli can be added if required)
