RECIPE: Tasty curry and coriander rissoles for dinner

                         

Ingredients

500g beef mince

1 large garlic clove crushed

1 small brown onion thinly diced

3 rashers of bacon or ham thinly diced                                             

5ish thick coriander stems and leaves thinly chopped

1 teaspoon of curry powder

1 teaspoon salt

2 tablespoons of BBQ sauce

1 egg

2 tablespoons of breadcrumbs plus extra for patting

Instructions

Chop and dice finely all ingredients and mix together in a large bowl. 

Shape into thin rissoles then pat with some dry breadcrumbs. Place on a heated and well-oiled large frying pan.

Cook on one side on Medium to High heat for about 1 to 2 mins then flip and cook on other side. May need to be flipped once again.

Place the lid on the pan temporarily if the outside is cooking quicker than the inside.

Drain on paper towels once cooked then serve with your favourite salad.
