Taste of Italy – Panna cotta with passionfruit and dark chocolate shavings

This year, my garden has been overflowing with passion fruit.

Their vibrant orange pulp and exotic aroma are a daily invitation to get creative in the kitchen.

Inspired by this abundance, I’m sharing a simple yet elegant dessert that brings out the best of these tropical gems: panna cotta with passionfruit and dark chocolate shavings.

To prepare the panna cotta, start by soaking two teaspoons of gelatin in three tablespoons of cold water. In a saucepan, gently heat 500 ml of heavy cream with 80 grams of sugar and a dash of vanilla extract.

Once it begins to simmer, remove it from the heat and stir in the softened gelatin until fully dissolved. Pour the mixture into small ramekins or glasses and refrigerate for at least four hours, or until fully set.

Meanwhile, cut open 4 to 5 ripe passionfruits and scoop out the pulp.

You can strain out the seeds for a smoother texture, but I personally love the crunch they add.

Just before serving, spoon the passionfruit over the panna cotta.

For the final touch, sprinkle generous dark chocolate shavings on top. The slight bitterness of the chocolate perfectly balances the sweetness of the cream and the brightness of the fruit.

This dessert is a celebration of freshness, simplicity, and the joy of sharing what grows close to home.
