The muffins are made in Evans Head, the sourdough bread is from Lismore, the coffee from Melbourne and the meat is from the local butcher – The Shack officially opens at the beach kiosk in Evans Head on July 1.
The Shack Group co-founder Paul Schulte has a cafe in Port Macquarie called Little Shack and has leased the Evans Head kiosk from Reflections.
The Shack is serving only coffee and muffins until its full menu is launched on Wednesday, July 1.
“We’ve hired staff locally and will be sourcing our meat products from Metcalfe Quality Meats in Evans Head and our bread from Simply Sourdough in Lismore, and looking to support local wherever we can in the future,” Mr Schulte said.
Manager Andrew Carter said The Shack at Evans Head was all about relaxed, ocean dining.
The new menu includes a crispy fish sandwich and a chowder (crab or vegetarian) served in a cob loaf.
There is a deli in the cafe where cured meats and deli items are sold.
There are meat packs from Metcalfs that campers can buy which is handy on the weekend when the butcher is closed.
Still to come is a pantry where Reflections guests (and locals) can buy sauces and staples such as bread and vegetables.
Reflections Evans Head park manager Jen Scott said the kiosk is loved by locals, and families.
“Our guests are always appreciative of its presence for snacks and meals and of course morning coffees while enjoying the spectacular views,” Ms Scott said.
The Shack will be open 7am–3pm seven days a week.
