What a fruitcake! Kelly comes first with slow cook time

What makes a fruitcake a winning fruitcake? Especially when everyone uses the same recipe.

Kelly Knight from Tatham knows. She won Best Rich Fruitcake in the Far North Coast final for ag shows in Group 1.

Kelly is the third generation in her family to exhibit at the pavilion at the Casino Show.

She shows cattle and vegetables as well.

At the final, there were seven cakes, one from each show.

Kelly has had tips and hints from older CWA women.

“I take on everyone’s advice.”

This year she puts her win down to cooking the fruitcake at a lower temperature.

It must have worked because the judge from Gloucester, Denise Hawdon, tasted all seven fruitcakes at Lismore Showgrounds and picked Kelly’s as the winner.

Casino Show Society acting secretary Sue Serone said Kelly’s win was wonderful news.

“Kelly has entered for quite a few years. This is her first big win for Sydney (show),” Sue said.

The placegetters in the final were:

1st, Casino – Kelly Knight

2nd, Lismore – Andrea Bryant

3rd, Grafton – Nea Martin
