Sicilian Parmigiana di Melanzane: A Taste of Tradition
The Parmigiana di Melanzane is a dish typical of Sicily, although its preparation is widespread throughout southern Italy, especially in Campania and Puglia.
The Sicilian version is particularly loved for its fried eggplants and rich tomato sauce flavored with fresh basil.
The recipe can vary slightly from family to family, but it remains a symbol of traditional, homemade cuisine from the island.
This beloved Sicilian dish brings together the warmth of Italy’s sunny south with layers of comfort and flavor.
It’s a true Italian classic, perfect for gatherings or family dinners. The key ingredients include fresh eggplants, tomato sauce, mozzarella, Parmesan cheese, and basil, all coming together in a beautifully baked casserole.
To prepare this dish, start by slicing the eggplants and salting them to draw out any bitterness. After rinsing and patting them dry, fry the slices until golden brown.
Next, layer the eggplant slices in a baking dish with a rich homemade tomato sauce (using ripe, sweet tomatoes), fresh mozzarella, grated Parmesan, and a few fresh basil leaves. Repeat the layers, finishing with a generous amount of Parmesan on top.
Nonna’s Special Tricks: Fry the eggplants in a mix of olive oil and butter: While olive oil is traditional, adding a little butter to the frying oil creates a rich, silky texture that enhances the flavor of the eggplant.
Some also swear by a light dusting of breadcrumbs between the layers to add a crunchy texture.
Let the Parmigiana rest for at least 15 minutes before serving—this allows the flavors to meld perfectly.
Enjoy this traditional Sicilian delight with a side of crusty bread and a glass of vino rosso!
Buon appetito.
