Ingredients
½ cup cocoa powder
1 cup of caster sugar
½ cup melted butter
3 tablespoons vegetable oil
1 egg
2 teaspoons vanilla essence
1 1/3 cups plain flour
½ teaspoon baking powder
½ teaspoon salt
½ cup chocolate chips
Instructions
Preheat oven to 175C and line two cookie trays with baking paper.
In a medium bowl mix together the cocoa powder, sugar, butter and vegetable oil. Beat in the egg and vanilla till combined.
In another bowl mix the flour, baking powder and salt together first before mixing into the wet ingredients until a dough forms (do not over beat). Fold in the chocolate chips.
Scoop out 1-2 tablespoons of mixture and roll into a ball then slightly flatten on the trays. Press them down as thick as you would like the cookies to come out.
Bake in the preheated oven for 10-12 minutes. Cookies will come out soft but will harden as they cool. Allow to cool on the trays for 10 minutes before transferring to wire racks.
