WARM YOUR HOME:  Bake these Apple and Cinnamon Muffins

Ingredients

2 cups plain flour

1 ½ teaspoons baking powder

½ teaspoon of salt

2 teaspoons of ground cinnamon                   

2 cups dices apples                                             

4oz butter, room temperature                            

1 cup caster sugar                                                 

2 eggs

2 teaspoon Vanilla Essence

½ cup milk

Topping

2 tablespoons of melted butter

¼ cup caster sugar     

2 teaspoons of ground cinnamon      

Instructions

Preheat the oven to 190C and place patty papers in 2 times 6 holder muffin trays.

Add and mix together the flour, baking powder, salt and the 2 teaspoons of cinnamon in a large bowl.

In a medium bowl  mix 2 teaspoons of  flour with ½ teaspoon of cinnamon then toss in the apples

Cream together the butter and sugar till light then add one egg at a time till fully incorporated. Then add the vanilla.

Gently fold in the flour mixture alternating with the milk. Then add the diced apples.

Scoop mixture into the muffin tins filling about ¾ in each  then bake about 30 minutes or until skewer comes out clean.

Once baked let cool slightly then take off the patty papers and brush the top with the melted butter then roll in the sugar and cinnamon mixture for the topping.
