RECIPE: Coconut Ice goes real nice with Barbie movie

Barbie is screening at the Kyogle Cinema on Thursday, July 20 at 6pm as a fundraiser for Village Hall Players. There are lucky door prizes. Dress up – or down. Tickets $20 at Clay Corner or at the cinema door.

Debbie Reid reckons coconut ice is the perfect accompaniment to Barbie. Here’s her recipe – Debbie’s that is, not Barbie’s.

Ingredients

2 cups of icing sugar

3 1\2 cups desiccated coconut

1 tin condensed milk(400ml)

3 drops red food colouring

Instructions

Line a square 24cm cake tin with baking paper.

Pour the icing sugar and the desiccated coconut into a large bowl and mix through.

Add the tin of condensed milk and mix with a spoon at first then use your hands to knead together.

Transfer half of the mixture to the lined tin and press out with your hands then the back of a soup spoon to even it.

Add the red food colouring to the rest of the mixture and knead with your hands till mixed through evenly.

Spoon the pink mixture evenly over the white and chill in the fridge for 1-2 hours.

Cut into small squares and enjoy.
