RECIPE: Passionfruit slice best served chilled for summer

Debbie Reid has a delicious slice for us all to make.

Ingredients

1 cup self raising flour

½ cup caster sugar

1 cup desiccated coconut

150g melted butter

3 tablespoons passionfruit pulp                        

395g sweetened condensed milk                        

3 tablespoons lemon juice

Instructions

Preheat oven to 160C fan forced and grease and line a 18 by 28cm slice pan.

Add the flour, caster sugar, coconut and melted butter into a large bowl and mix together until a dough forms (use your hands if required).

Press the mixture into the prepared pan then smooth the top with the back of a spoon.

Bake in the oven for approx 10 to 12mins or until lightly golden then set aside to cool slightly.

Whisk the condensed milk, lemon juice and the passionfruit together in a bowl then evenly spread over the top of the cooled base.

Turn the fan-force off on the oven to leave it at just 160c then place the slice back in the oven for 15 minutes or until the passionfruit layer has set once touched.

Once baked, let it cool in the pan completely before cutting into slices. If its hot…store in the fridge.
