RECIPE: Portuguese Chicken with garlic mayo

Ingredients

1 uncooked chicken

1 dessert spoon of fresh lime juice

1 dessert spoon of peanut oil

1 heaped teaspoon of Sambal Oelek

1 heaped teaspoon of minced or grated fresh ginger

3 garlic cloves crushed

 Method

Cut chicken along breast bone till cut open completely on one side then turn chicken over and crack chicken flat by pressing down on the legs hand over hand.

Make up marinade in a small bowl by mixing the lime juice, peanut oil, Sambal Oelek, ginger and garlic together and coat both sides of the chicken by hand. Leave to marinade in the fridge for 15 minutes.

Place the chicken on a wire rack with baking tray underneath and add a little water to the tray to keep chicken moist.

Cook in preheated oven at 200c for 45mins or until cooked.

To make garlic mayo which is four large garlic cloves, crush them and mix with about  ½ cup of a good mayonnaise.
